I want to link Power BI to the our Data Warehouse in Jet Analytics.
I assume it is best to link to the Views in SQL, but there are 2, one ending _T and one ending _V.
What is the difference between these and does it matter which one I use as the source for Power BI?

It does make a difference and I could be wrong on this but I believe you should be using the _V tables. Ideally, it works best against the Cubes though since you won't have do any additional data manipulation to link tables if needed.

Object with _V ending doesn't mean it is a view, it also can be a table, depending on the settings of the object (Table Settings -> Performance -> Enable physical valid table.
Power BI will not work with OLAP cube at all. This solution is not supported in Power BI. If you want to connect Power BI with DWH you can use objects with _V ending, or create a custom view with dedicated data model for the report, or use semantic model (tabular model like Azure Analysis Services)
Purely out of interest I came across this a while back in one of the knowledge base articles :
Table_R = Raw table Structure (as extracted from source with no cleansing or modification)
Table_L = Error List (Logs error number)
Table_M = message table (Logs Error message for error number)
Table_T = Transformation table (interim table for the data during data cleansing)
Table_V = “Valid” table structure (All records imported and all data quality processes applied)
