If you are using Office 2007 the memory shouldn't be an issue. Office 2007 by default limits the total amount of resources used so other tasks can be completed at the same time. As Mark mentioned you should consider limiting the amount of memory one session in Citrix can use. Earlier versions of Office will use all avaliable resources by default if they are allowed.

Jet Reports Historic Posts Hi there,
Does anybody else use Jet in the Citrix Environment? I am having major problems with reports freezing, bizarre data corruption and Excel just closing down with the annoying bog standard "do you want to send an error report" message.
Very interested to here if anyone else has had/is having similar problems?

Jet Reports Historic Posts I recall there being a thread with processor usage being an issue - a couple of similtanous users sending CPU to 100%. I'd suggest the best course of action would be to log a ticket with Jet support.
Other than that, I would monitor memory usage - Jet normally only crashes for me when I have a report that uses a lot of RAM and when I have lots of other memory hungry programs running at the same time. (I have a local report that sends memory over 250MB per report when executing). I'd also make sure you're on the latest version of Jet & Excel is fully patched.
